One of my morning highlights is seeing the bees bu One of my morning highlights is seeing the bees busy at work hopping from lavendar plant to clover to my black eye Susan's.  There is a peace knowing that their visit is creating something pure and tasty.
Grilled Cheese is an ultimate comfort food! But h Grilled Cheese is an ultimate comfort food!  But how 'bout we take it up a notch! 

Maybe some ham, fig jam, spicy garlic pickles and hibiscus pickled onions!  Pretty tasty!

I know I probably lost you at hibiscus pickled onions...but no matter how you make your grilled cheese, upgrade your bread spread.  Butter works great, but adding mayo and some parmesan cheese to that butter, give you a super tasty crust that has a beautiful crunch.

My Grilled cheese spread:
3 Tbsp mayo
3 Tbsp shredded parmesan cheese
1/8 tsp onion powder
1/8 tsp garlic powder
3 Tbsp softened butter

Mix it all together until combine and spreadable. 

And your grilled cheese game just leveled up!

Pistachio Scape crusted Salmon The class winner f Pistachio Scape crusted Salmon

The class winner from today's hands on class on Scapes.  I ❤️ Scapes!  They are only in season once a year around late May to mid June. And often a hot item at the farmers market. 

Scapes are the flowing stem of the garlic.  Farmers will trim them off to prohibit the garlic from blooming and allowing extra growth on the garlic bulb. 
Flavor profile is similar to garlic, subtle.  Texture is similar to that of an asparagus.  You can eat it raw, sauté, roast or blend into a delicious pesto! 

Here is the recipe for the Salmon
1 12oz piece of salmon
1 cup shelled pistachios
1 Tablespoon honey
1 Tablespoon lemon juice
2 Tablespoons scape pesto
3 Tablespoons mayonnaise
1 Tablespoon paprika
1 Tablespoon salt
1 Tablespoon onion powder
additional honey, to drizzle at the
end

Preheat the oven to 350F.  Set on a parchment
paper-lined baking sheet. Pat dry the salmon.  Season lightly with garlic, onion powder, salt,
and paprika. Set aside.
In a small bowl, combine the mayo, pesto,lemon juice, and honey. Smear evenly over
salmon.  Spread
the chopped pistachios evenly over the pesto
layer. Lightly drizzle honey over the pistachios. Bake
for 30–35 minutes.

For the scape pesto:
1 cup garlic scapes
3/4 cup basil leaves
1/4 cup parsley leaves
¼ cup pistachio nuts, toasted
½ cup shredded parmesan
cheese
2 Tablespoons lemon
juice
½ teaspoon kosher salt
¼ teaspoon black pepper
1/2 cup olive oil

In a skillet, slightly toast the pistachio until fragrant and warm. Combine all ingredients in a food processor except olive oil, pulse to get them chopped,
then process until uniformly blended. Slowly stream olive oil into the processor
until consistancy you like.
Taste and decide if you want more cheese, or more lemon juice, or more olive oil or
salt.

Kids can cook! Just give them the chance. Tonig Kids can cook!  Just give them the chance. 

Tonight, my kids helped me teach a class of parents and kids.  They made hamburger buns from scratch, made chili, meatballs and even made pasta from scratch.  Piper owned the fryer for our golden onion rings..in fact that's the only thing she requested to do.  With supervision, we worked through how to drop them in without splashing, when they are done, and to salt afterwards.  Before long she was ready to apply for that fryer job at the fair! 

Have your kids help in the kitchen can be easy. Tasks like ripping up lettuce for a salad,  mixing a bowl, or even letting them flip that pancake can give little moments of confidence and boost their independence.

Quick dinner packed with flavor! Soy and Honey gl Quick dinner packed with flavor!  Soy and Honey glazed chicken with quick pickles and rice.  Definite crowd pleaser. 
 
Here is the recipe:
Quick Pickles
  1 long English Cucumber or 3 mini.  cucumbers, thinly sliced
  1 shallot, thinly sliced 
  1 tsp. salt
  1 tsp. sugar
  1/4 cup rice vinegar
  1/4 tsp. freshly cracked pepper
  A pinch or two of red pepper flakes

In a colander, place thinly sliced cucumbers and sprinkle with salt and sugar.  Let sit for 15 minutes.  Liquid will be drawn out of the cucumbers.  After 15 minutes, in a bowl, add seasoned cucumbers, shallots, vinegar, rice vinegar, cracked pepper and red pepper flakes.  Let sit while making the chicken. 

Soy & Honey Glazed Chicken
4 pieces boneless skinless chicken (about 2 pounds)
1/4 cup soy sauce
2 Tbsp honey
2 cloves garlic, minced
1/2 tsp ground coriander 
1/2 tsp ground ginger or 1 tsp fresh ginger
1/4 cup water
2 Tbsp olive oil

Cilantro leaves and stems, chopped

In a plastic bag or bowl, mix together the soy sauce, honey, garlic, coriander, and ginger. Add in the chicken breast and coat.  In a large skillet, heat oil over medium high heat, add the coated chicken. Reserve marinade.  Cook chicken until brown on both side - about 3 minutes on each side. 
Add in the reserve marinade and 1/4 cup water to skillet.  Bring to a simmer, reduce heat to medium, medium low.  Cover the skillet and cook until chicken is cooked through.  About 10 minutes total (5 minutes on each side). Thickness of chicken will determine cook time.  Make sure internal temperature is at 165F. 
Uncover the skillet, if the marinade has reduced to a glaze, turn chicken to coat.  If your marinade is still soupy, removed the chicken and turn heat up to medium high to reduce to a glaze or thick sauce. Coat chicken in sauce. 
Serve chicken over rice with pickled cucumbers and Cilantro.  Or wrap in a tortilla. 

Note: size of skillet can determine the rendering of your sauce. If your sauce over reduces, add 1 Tbsp of water at time until it comes back to a shiny sauce you can drizzle over chicken.

Family dinner is always a treat. Tonight, Piper Family dinner is always a treat.  Tonight,  Piper made menus,  acted as host,  and then at one point came over as the manager to take touch 🤣. I asked why the shield - "to shield me from your complaints"🤣🤣 She's ahead of her times.
Cookbook Review: "Ruffage" by Abra Berens This boo Cookbook Review: "Ruffage" by Abra Berens
This book is a fabulous guide to vegetables.  The book is arranged in alphabetical order with each chapter a new vegetable.  A brief one page breakdown to how to buy, how to store and notes with further details.  Then recipes broken down into cooking methods like steam roasted, boiled, raw, ect.  But my favorite is how their recipe offer variations for different flavor profiles. 

This is a great resource for anyone looking to elevate their veggie game!  Easy, elevated recipes with great information for success picking our your veggies to cooking!
